Grew up in Plymouth, just over the water from Cornwall. Beautiful part of the country, but big problems with low wages, high property prices and poor transport links. Many people leave which is sad but understandable. Almost none of my friends live in Devon/Cornwall any more.
^^Not from Devon, but spent a large part of my growing up in North Devon...and as said above big problems...but a decent place for a short break
Ownersdirect, Stay in England try to find somewhere relevant to your past or a memory(shows you thought about it), be traditional. little cottage, lay it on with the owners to have something ready there. middle of nowhere, no tv. weekend away. she will melt....... O and dont tell her, build it up. those were the days pfffft............... ;)
My older brother lives in Cornwall just outside Newquay, loads of lovely small villages near by, Polzeath is my favourite place, my folks have had a caravan there for years, took my Mrs there for the weekend earlier this year, but there really is loads to see....
Also went to the albert dock in Liverpool and stayed there for two nights for her birthday this year, some nice restaurants and the obvious Beatles malarkey to look at.

Don't live there but my other half's folks own a little fisherman's cottage in Polruan, a little peninsular type place across from Fowey. It's a marvellous place for a few days, walking, beach etc but you'd be bored out of your mind before long.
My grandparents live in Totnes, a lovely bit of Devon that I always enjoy.
Rome all day long. Lovely in March. She'll love it, loads to see, loads of good shopping and great slice of Italian life. Could take her to a game on the sunday as well !
Bruges and Antwerp are good and easy to get to, get around etc, also consider Ghent. Chocolate shops for missus, Leffe Blonde and Duvels for you Belgium can be freezing depending on timing though
