Mainly due to a an ongoing sinus problem which I think can be cured through a certain diet rather than popping pills and also I would like to lose about a stone. Not that I am overweight I just want to be a bit lighter on the bike.

I see. Cutting out dairy often cures sinus problems. Don't need to cut out meat though. Meat is the most nutrient dense food you can eat. The only issues with meat are carcinogens formed when charring at high temps, and the mTOR pathway which stimulates growth of all cells good and bad. A moderate amount of quality protein 0.75g per kg of body weight is enough.
