Fair play mate! I've been looking into how to turn a conventional BBQ into something resembling a smoker, the online tutorials make it look easy enough but I get this feeling itd be a lot harder in reality. Slow cooking food is the bollocks though
Had pulled pork yesterday. Soooo good. It's pretty easy making a conventional barby, into a smoker. Just get the coals glowing, put on whatever wood you wanna smoke with, and close the lid.
At least that's the way we do it at the restaurant I work at.

Some excellent bbq information in the Observer magazine last Sunday. Nice write up on Polpo too and the man behind it, how he designs the restaurants, excellent read.
Great thread this, always interested on where to eat when out and about.
For anyone else who likes to do a spot of cooking.. Punchfork.com is a brilliant source of recipes, from basics to jalapeño popper filled bacon wrapped burgers, which I plan on making next time it's BBQ weather.
